When winter winds, ice and snow invade our lives…soup must be on the menu.. Nothing is more inviting that a hot bowl of soup and some wonderful bread, to calm ‘old man winter’. Try this easy, but delicious soup and tuck in with the family for the evening….a good book, movie or fire in the fireplace is in order.


Surviving Winter

Place tomatoes, chilies, garlic salt and pepper in microwave container. Microwave for about 1 minute at 100% power (High). Blend in liquids and heat at 50% power (Medium) for 10-18 minutes or until hot. Divide cheese into serving bowls and pour hot soup over cheese. Serve at once.

Mexican Cheese Soup

1 medium tomato, peeled, seeded and chopped
1 can (4 oz.) green chilies, chopped or cut into strips
½ tsp. garlic salt
¼ tsp. pepper
1 can cream of potato soup
1 can cream of onion soup
1 can evaporated milk
2 ½ cup water
2 cups (8 oz.) Monterey Jack, cheese, cubed
