MICROWAVE COOKING with Carolyn Dodson

4 slices bacon, or precooked bacon crumbles 2 tablespoon butter 6 ounces frozen has brown potatoes 1/4 cup chopped onion 1/4 cup chopped green pepper 6 eggs 1/4 cup milk 1/2 teaspoon salt 1/4 teaspoon basil, optional Dash of pepper 1 cup (4 oz.) shredded cheddar cheese
Cook bacon in microwave at 100% power until done. Cool, crumble and set aside. Place butter, potatoes and vegetables in a 1 quart casserole or other round dish such as a cake or pie plate. Cook uncovered for 5-6 minutes at 100% power, stirring once. Mix eggs, milk and seasonings while vegetables cook. Flatten potato mixture and pour the eggs over the top. Cover and cook at 70% power for 5-7 minutes or until eggs are almost set, gently stirring once for even cooking. Sprinkle with bacon and cheese. Cook, uncovered, for an additional minute or until cheese melts. Let stand a few minutes before serving.
